Ingredients

cooked beans (or 1 1/2 cans no or low-sodium beans)

baked sweet potato, peeled (about 1 cup)

diced red onion

ground flaxseeds

ground pecans
Can grind in food processor or coffee grinder or just chop really small

nutritional yeast

apple cider vinegar

Can also use fresh lemon juice and water

Instructions
Preheat oven to 375°F.
Mash sweet potato and beans together with a potato masher or fork.
Add rest of ingredients and mix to combine.
Form into 8 patties.
Place on cookie sheet lined with parchment paper.
Bake for 35 minutes, or until lightly browned.
Serve on whole grain bread or lettuce wrap with lettuce, tomato, onions, mustard, no-sugar ketchup, or other toppings of choice.
Notes
Freezes well with wax paper between patties (pre-cooked).
