Heavenly Raw Chocolate “Cream” Pie (v, gf)

Best. Chocolate. Pie. EVER. Seriously, this pie is amazing! Luxurious and creamy (from avocado, not cream!), and well, chocolatey. Wow. And because it’s so rich, it’s very satisfying.  I’ve been tweaking this recipe for a few years, trying to make it all whole foods with just the right amount of creamy and chocolate-ness. Yum.

Contrary to what the cooking shows and media tell us, even desserts and holidays matter – we never want to cause inflammation, and this pie is our answer to chocolate cravings, while still being good for us.

We serve it in our house when we have guests, for holidays, and friends gathering. It’s how I tell people I love them (well, one of the ways!) It’s a special pie, and it’s made for special occasions.

Heavenly Raw Chocolate Cream Pie Crust

Ingredients
  

  • 1 cup raw almonds
  • 2/3rds cup raw pecan
  • 10-11 medjool dates, pitted About 1 cup
  • 2 tbsp raw cocoa powder
  • 3/4 tsp vanilla extract alcohol-free preferred
  • 1/4 tsp freshly ground nutmeg

Instructions
 

  • Place nuts in food processor, and pulse until crumbly.
  • Add remaining ingredients, and process until it all comes together. If too dry, can add another date or a tablespoon or two of water.
  • Pour into a pie dish or pudding cups and press down evenly.

Ingredients
  

  • 1 ripe avocado, seeded
  • 1/2 cup raw cashews
  • 1/3rd cup cocoa powder
  • 1-1 1/2 cups non-dairy milk
  • 1 tsp vanilla alcohol-free preferred
  • 1 heaping cup medjool dates, pitted (about 12-13 dates)

Instructions
 

  • Place all ingredients in high-powered blender. Blend until smooth and creamy. Start with 1 cup nondairy milk (or half nut milk, half water) and adjust  as needed for consistency. Use tamper tool to get it all combined. Be sure to turn off blender, scrape sides, and re-blend until all is mixed in and it's smooth and creamy. If it appears lumpy, add more nondairy milk or water until reaches full creaminess.
  • Pour into pie filling or bowls for pudding.
  • Optional - top with fruit, such as berries or crushed nuts.
    Best if refrigerated briefly before eating.

Notes

Other options:
 
Add mint extract for chocolate mint pie (caution, as mint becomes overpowering fast; start small).
 
Add cayenne pepper and cinnamon for Mexican chocolate pie.
 
Add raw natural peanut butter (peanuts only) for chocolate peanut butter pie.
 
Add toasted hazelnuts to the top for chocolate hazelnut pie.
 
Can also serve deconstructed in mason jars.
