Choco-Coco Amaze-Balls

Makes 20 balls

This is a great recipe because these treats are made with real, whole foods, minimally processed to retain their fiber, antioxidants, and all their wonderful nutrients.  Best of all, they’re absolutely delicious, and can easily satisfy a chocolate or sweet craving. Because they’re so rich, it’s hard to overeat them, which is why they make a perfect dessert or energy boost. They take just a few minutes to prepare, and they’re well worth the effort.

  • Ingredients:
    1 cup raw nuts (I use almonds, pecans, and walnuts – about 1/3rd of each)
    2 heaping tablespoons raw cacao or cocoa powder (adjust to flavor)
    12-13 pitted medjool dates – about 1 cup (adjust for sweetness)
    *1/4-1/2 teaspoon extract of choice (alcohol free) – ie. real vanilla, almond, mint, etc. (optional)
  • *Pinch of sea salt (optional)
  • -1/4 cup unsweetened shredded coconut flakes

Instructions:
Put nuts, cocoa powder in food processor and process with until coarsely mixed. (Cover your ears – this can be LOUD!)

Add dates, extract and salt (if using).  Process until mixture holds together when gently rolled between your fingers. May add a few drops of water to help batter stick together.

Form into balls and then roll in 1/4 cup coconut flakes.

 

Alternative: Roll into finely chopped nuts (almonds, hazelnuts, pecans, pistachios) or hemp seeds instead of coconut. Or don’t roll them in anything! When I add mint to them, I leave them as is.
