Spicy Peanut Slaw

A flavorful change from traditional cole slaw

Ingredients
  

  • 4 cups thinly sliced cabbage
  • 1-2 green onions, sliced
  • 1/2 cup shredded or finly chopped carrot
  • 3 tbsp natural peanut butter
  • 2 tsp coconut aminos
  • 2 tsp lime juice
  • 2 tsp rice vinegar Can substitute with apple cider vinegar
  • 4 tbsp warm water
  • Pinch cayenne pepper Adjust to desired level of spiceness
  • 2 tbsp sesame seeds

Instructions
 

  • Put cabbage, carrot, and green onion in a mixing bowl
  • In a separate, smaller bowl, add peanut butter, warm water, lime juice, coconut aminos, and vinegar until well-combined. Can also use blender for this.
  • Pour over the salad mix and toss until the cabbage slaw is evenly coated.
  • Top with sesame seeds and a lime wedge.
