Spicy Peanut Slaw

This salad is quick, packed with nutrients, and best of all, it’s so delicious! Definitely one of my all-time favorites. It goes well with crunchy cabbage to make a flavorful slaw. The little spice at the end is a bonus and leaves you wanting more. It’s so good, you’ll almost forget it’s a salad!😃🌱

Spicy Peanut Slaw

A flavorful change from traditional cole slaw
Servings: 4
Course: Dinner, Lunch, Picnic, Salad, Side Dish

Ingredients
  

  • 4 cups thinly sliced cabbage
  • 1-2 green onions, sliced
  • 1/2 cup shredded or finly chopped carrot
  • 3 tbsp natural peanut butter
  • 2 tsp coconut aminos
  • 2 tsp lime juice
  • 2 tsp rice vinegar Can substitute with apple cider vinegar
  • 4 tbsp warm water
  • Pinch cayenne pepper Adjust to desired level of spiceness
  • 2 tbsp sesame seeds

Method
 

  1. Put cabbage, carrot, and green onion in a mixing bowl
  2. In a separate, smaller bowl, add peanut butter, warm water, lime juice, coconut aminos, and vinegar until well-combined. Can also use blender for this.
  3. Pour over the salad mix and toss until the cabbage slaw is evenly coated.
  4. Top with sesame seeds and a lime wedge.
